薑母鴨
 
 
材料   調味料   醃料

紅番鴨１隻

老薑300g

黑麻油３大匙

米酒300cc

水2000cc

配料：

高麗菜150g

豆皮５個

金針菇150g

  

鹽少許

冰糖１小匙

薑母鴨藥包：

當歸10g　　　川芎10g

高麗參10g　　黃耆40g

枸杞25g　　　參鬚15g

紅棗30g　　　西洋參15

桂枝20g　　　花椒20g，以上以棉布袋裝，袋口綁緊

  
１.老薑200g洗淨加水２碗用果汁機打汁，將薑渣濾掉，留薑汁備用(圖一)
２.老薑100g切片爆香用
３.紅面番鴨全鴨以清水洗淨，切塊後備用
４.快鍋內加入適量的黑麻油燒熱，爆香老薑到薑片金黃(圖二)
５.放入切塊的鴨肉，以中大火炒至表皮熟，將其原味封住
６.陸續放入水及中藥包，加上快鍋蓋＋配重頭以中火加熱(圖三)
７.等配重頭開始搖晃並發出"七七"聲，調整火力為弱火續煮７分鐘後熄火(圖四)
８.快鍋安全指示閥下降後開蓋(圖五)
９.加入薑汁、米酒、配料適量再次沸騰即可食用，不必再加調味
１０.如需要，則適度加入調味料食用

黑麻油熱鍋後，將拍碎的老薑入鍋爆成金黃色，如此才能產生濃郁的香氣

米酒屬酒精易揮發不宜一開始就放入快鍋內久煮，可在完成烹煮後再適量加入即可
