紅燒牛肉麵
 
 
材料   調味料   醃料
．牛腱1斤
．小白菜200g
．拉麵半斤
．蔥段.薑末適量
．花椒1大匙 		  A:
．醬油2大匙
．鹽1茶匙
．水800cc

B:
．蕃茄糊1/2杯
．醬油膏2大匙　
．辣豆辮醬3大匙
．冰糖3大匙
．米酒2大匙
．水2000cc
．魯包：桂皮5錢．八角5錢
  
1.蔥段.薑末.花椒以少許油在快鍋內爆香後取出
2.牛腱洗淨，切約1公分的厚片狀，放入快鍋炒到表面收乾，加入調味料A略作翻炒後再加入調味料B
3.蓋上快鍋蓋開火烹煮，待配重頭發出"七七"聲響後，改小火計時5分鐘後熄火
4.待壓力指示閥下降後，即可開蓋，取出牛肉備用
5.濾除湯中渣屑，即可搭配麵條.青菜.牛腱肉片.蔥花即可完成一碗紅燒牛肉麵
